Peruvian cuisine was born by combination of home (Peruvian) ingredients and tastes with those brought to the country by Spanish, Italian, Chinese and Japanese immigrants. Peru is one of the countries with highest number of standardized national dishes. Theres almost 500 of them.

Many of ingredients used in Peruvian cuisine are from America. Due to the development during pre-Columbian period in Peru, it is assumed, that most of these ingredients were initially cultivated in Peru and only then, later its use was spread into other parts of America.
